1. Classic Grilled Tuna Sandwich
What you need:
- 5 0.15 kg tuna steaks (3/4 inch thick)
- 2 tbsp. chopped cilantro
- 1 tbsp. ground chile pepper
- 1 tsp. fresh lime juice
- 1 tsp. grated lime rind
- 1/4 tsp. ground chipotle pepper
- 6 tbsp. mayonnaise
- 5 tsp. olive oil
- 4 slices sweet onion
- 1 red bell pepper, seeded and quartered
- 4 red lettuce leaves
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1/4 tsp. ground cumin
- 4 sandwich buns
Preparation:
In a small bowl, mix together cilantro, chile pepper, chipotle, lime rind, lime juice and mayonnaise. Set aside. On a grill pan, brush bell pepper and sweet onion slices with 3 tsp. olive oil and sprinkle with 1/4 tsp. salt. Cook on a pre-heated grill (medium-high heat) for 3 minutes per side. Set aside and keep warm. Coat tuna steaks with remaining olive oil and salt with black pepper and cumin. Grill over medium-high heat for 3 1/2 minutes per side or longer for desired doneness. Cut each bun in half. Spread bottom bun with mayonnaise mixture before topping with 1 bell pepper, 1 lettuce, 1 onion, 1 tuna steak and top bun.
2. Grilled Vegetable Salad
What you need:
For the salad:
- 1/2 cup trimmed green beans
- 1/2 cup trimmed sugar snap peas
- 1/2 cup cut carrots (1/2-inch thick pieces)
- 1 cup red onion (1/2-inch thick slices)
- 1/2 cup thinly sliced radish
- 5 cups torn Romaine lettuce
- 1/2 tsp. ground black pepper
- 1/4 tsp. garlic salt
- Cooking spray
For the dressing:
- 1/3 cup plain yogurt
- 1/3 cup mayonnaise
- 1/4 cup low-fat milk
- 1/4 cup crumbled blue cheese
- 1/4 tsp. ground black pepper
- 1/8 tsp. salt
Preparation:
Combine all dressing ingredients in a medium bowl then whisk until well-blended. Cover and chill. Bring green beans, sugar snap peas and carrots to a boil for 3 minutes in a medium pan. When ready, place in a medium bowl then add onion. Lightly coat with cooking spray, sprinkle with black pepper and garlic salt and gently toss to coat. Cook vegetables on a pre-heated grill (medium-high) for 6-8 minutes per side or until browned. Divide grilled vegetables, lettuce leaves, radishes and dressing among 4 equal servings.
3. Grilled Chicken and Cheese Snack
What you need:
- 2 cups cooked shredded chicken meat
- 12 cheese slices
- 1/4 cup softened butter
- 1/2 cup mayonnaise
- 1/3 cup raisins
- 1/4 cup toasted almonds
- 1/4 cup diced celery
- 12 slices whole wheat bread
Preparation:
In a medium bowl, combine chicken, raisins, almonds, celery and mayonnaise. Place a cheese slice on 6 of the bread slices before topping with chicken mixture and another bread slice. Spread half of the butter on one side of each sandwich. Grill sandwiches, buttered side down, on a pre-heated grill (medium heat) until lightly brown. Spread remaining butter on other side of each sandwich and repeat grilling process.
